Amari Kuala Lumpur announced the theme for its Ramadan Buffet this year as Sajian Nostalgia, an homage to the flavourful, traditional dishes made by mothers during the fasting season around the country, thus evoking warmth and familiarity among guests.

Executive Sous Chef of Amaya Food Gallery, Chef Haniff Muhammad said, the theme focuses on reminiscing past memories and experiences, whether with family members or friends so guests can live through those moments again at their premise.

“We want to bring back what the guests may have forgotten in the past that they have experienced together with their loved ones.

Executive Sous Chef of Amaya Food Gallery, Chef Haniff Muhammad.

“This could be an opportunity for them to reunite and recall what the food of their ancestors used to taste like no matter how difficult it may be to do so now,” he said during an interview with Kinihalal.

This year, Amaya Food Gallery’s iftar line-up ranges from flavourful appetisers such as Salad Ikan Bilis dan Kacang, Lemang Ketupat Daun Palas and Serunding to classic Malay favourites including Ayam Panggang Percik, Udang Laut Tumis Sambal and Sotong Masak Lemak.

However, Haniff Muhammad said the signature dish that champions the long list of cuisine is Sup Tulang Rawan or more commonly known as Sup Gearbox, which delivers a fragrant aroma of beef bones stewed in a spicy red broth for a deeply satisfying and flavourful experience.

The signature dishes at Amaya Food Gallery, Amari Kuala Lumpur during their Sajian Nostalgia buffet will be the Gristle Soup and Portuguese Grilled Fish.

To better enhance the taste and aroma of the beef, Haniff Muhammad said the dish is cooked using old-fashioned techniques derived from Malaysian grandmothers’ recipes, ensuring authenticity and the legacy continues.

For seafood lovers, Amaya Food Gallery also prepares the Portuguese Grilled Fish that will not only heat up your taste buds but leave a lasting impression that makes you wonder if you have eaten it somewhere else before, immersing you into your favourite memories.

“The fish requires a lot of patience to make because the process ranges from the paste and marinate to cooking while ensuring the aroma of the spices are intact without overpowering the taste of the fish.

Traditional delicacies such as Dodol Kelapa are also available.

“The dish has a sense of familiarity, like maybe we have tasted it somewhere else and when we taste it, it brings us back to our old times when we were with someone a long time ago.

“It brings us together so we can remember the taste of the food we have long forgotten,” he said.

After the iftar, guests are invited to indulge in traditional Malaysian desserts including assorted Malay kuih such as Kuih Lapis, Pulut Panggang, Seri Muka, Onde-Onde, Kuih Jagung, Dodol Durian and Kuih Tepung Talam.

As of 5th January 2026, Amaya Food Gallery at Amari Kuala Lumpur has been certified halal by the Department of Islamic Development Malaysia (JAKIM).
